White Bean Breakfast Hash

In a Nutshell:

An amazing White Bean Breakfast Hash, delicious for a time poor protein hit!


  • 1 clove garlic, minced
  • 1/2 400g tin cannellini or butter beans, drained & rinsed
  • salt & pepper, to taste
  • 1 cup baby spinach leaves
  • 2 eggs
  • 1/4 avocado, sliced
  • 1 lemon wedge
  • Prep time: 5mins
  • Cook time: 8mins
  • Serves: 1 people


    1. Heat a non-stick frypan over medium heat, add garlic and saute for 1 minute. Add beans and saute on high for a few minutes until beginning to brown. Stir through
    2. spinach and season with salt and pepper.
    3. Move hash to the side of pan, crack in two eggs, and cook to your liking.
    4. Serve eggs and beans with avocado, and a squeeze of lemon.
