In a Nutshell:
An amazing White Bean Breakfast Hash, delicious for a time poor protein hit!
Ingredients:
- 1 clove garlic, minced
- 1/2 400g tin cannellini or butter beans, drained & rinsed
- salt & pepper, to taste
- 1 cup baby spinach leaves
- 2 eggs
- 1/4 avocado, sliced
- 1 lemon wedge
- Prep time: 5mins
- Cook time: 8mins
- Serves: 1 people
Steps:
- Heat a non-stick frypan over medium heat, add garlic and saute for 1 minute. Add beans and saute on high for a few minutes until beginning to brown. Stir through
- spinach and season with salt and pepper.
- Move hash to the side of pan, crack in two eggs, and cook to your liking.
- Serve eggs and beans with avocado, and a squeeze of lemon.
