In a Nutshell:
Awesome snack option, easy to make Banana Loaf.
Ingredients:
- 13/4 cup wholemeal flour
- 1 tsp ground cinnamon
- 1 tsp bicarb soda
- 1/2 tsp salt
- 2 eggs
- 1/3 cup olive oil
- 1 tbsp warmed honey
- 1/4 cup Greek yoghurt
- 1 tsp vanilla extract
- 3 very ripe medium bananas, mashed
- 1/3 cup dark chocolate chips
- Prep time: 10 mins
- Cook time: 50 mins
- Serves: 12 person
Steps:
- Preheat oven to 160°C and grease a loaf pan.
- Combine flour, cinnamon, bicarb soda and salt in a medium bowl and set aside.
- In a large bowl, beat eggs, oil, honey, yoghurt and vanilla for 2 minutes. Gently stir in bananas and chocolate chips and then combine with the flour mixture.
- Pour batter into pan and bake for 50-55 minutes or until a toothpick inserted comes out clean. Cool for 10 minutes before slicing.
