Baked Sea Bass With Greek Salad

In a Nutshell:

If you love Sea Bass, you will love this salad mix.

Ingredients:

  • 2 x 200g sea bass fillet (or white fish)
  • 2 tsp rosemary, finely chopped
  • 1 garlic clove, finely chopped
  • salt & pepper, to taste
  • 1 tsp olive oil
  • Greek Salad
  • 1/4 red onion, finely sliced
  • 250g cherry tomatoes halved
  • 1/2 cup kalamata olives
  • 1 continental cucumber
  • 60g feta, cut into cubes
  • 2 tsp olive oil
  • 1 tsp lemon juice
  •  
  • Prep time: 5 mins
  • Cook time: 20 mins
  • Serves: 2 person

    Steps:

    1. Preheat oven to 220 C.
    2. Line a tray with baking paper and place fish, skin side up, on the tray. Sprinkle with rosemary, garlic, salt and pepper and drizzle with olive oil. Bake for 20 minutes or until fish cooked through.
    3. To prepare the salad, place all salad ingredients into a bowl and toss until combined. Serve with baked fish.
