This is by far the best textured vegan, gluten-free and oil-free banana bread we have made and as athlete Dana pointed out - it definitely has something to do with the protein powder I used! If you have experimented with protein powder whilst baking before, you probably know that plant protein is typically the best for texture, which is usually made of pea and rice! But using a peanut-based protein is NEXT LEVEL! The texture you get is the perfect consistency and fluffiness I have ever made! This is why we LOVE the Macro Mike Plant Based Protein+ range - absolutely perfect for baking!

- 1 Scoop Plant Based Protein+ by Macro Mike
- 1 Large Ripe Banana
- 1/4 Cup Lite Coconut Milk (from a can)
- 2 Tablespoons Peanut Butter (try and opt. for a natural option!)
- 1/4 Cup Water (additional may be needed if using a different protein!)
- 1/2 Cup Buckwheat Flour
- 1/4 Cup Tapioca Flour
- 1 Tablespoon Chia Seeds
- 1 Teaspoon Baking Soda
- Pinch of salt
Sweetener - this recipe is not overly sweet which we like, but if you want a little bit of sweetness, add sweetener to your taste!
Chocolate chips (Try and choose dark chocolate or low sugar chocolate!)
Cinnamon, vanilla, other spices (Spice it up - whatever takes you fancy!)
Nice and simple here!
- Preheat an oven to 180°C, and pre-line a loaf pan with baking paper (parchment paper).
- In a large bowl, mix together all ingredients listed above.
- Empty all mixture into the loaf pan, and bake for approximately 40 minutes - or until a toothpick comes out clean.
- When cooked throughout, flip bread onto a cooling rack, allow to cool, and then dig in!
